Pizza Campania is housed in a refurbished Granary in Bozeman, MT.
The redevelopment project was conducted by Montana Avenue Partners, located here in Bozeman.
Nearly all of the materials used to reconstruct the space for the restaurant were from recycled materials.
The floor for instance came from a 147 year old barn up in Washington State.
Most of the brick and all of the wood beams were donated from the owner of the old Lehrkind Brewery here in Bozeman.
The bar tops came from a large Douglass Fir up in Bridger Canyon,
which had died standing and we cut down to salvage the wood.
It’s a unique space and has had many uses of the years.
Pizza Campania is a classic Neapolitan Pizzeria. We prepare our pizza as it is done in Naples, Italy – the old fashioned way.
We use a special flour made exactly for wood oven baking. Our tomatoes are grown in near Naples in fields with volcanic soil,
rendering a characteristic flavor. These tomatoes are also hand-picked by family run businesses allowing them to ripen on the
vine. Our Cheese is also Italian – you may choose between the classic Mozzarella or the Bufala Mozzarella.
The Bufala Mozzarella is produced from the special breed of Water Buffalos in and around Campania,
the region surrounding Naples; which have been supplying this incredible cheese since the Roman times – its packed full of
Our oven is hand built; using volcanic stone and can easily reach temperatures over 900 degrees. This high heat, along with
the specialty ingredients, is what gives Neapolitan pizza its special flavor. The high temperatures of the volcanic stone oven
lock in the flavor and moisture of the dough.
William Butler, the Chef and Owner of Pizza Campania, has spent the last decade (less a 3 year sabbatical to Afghanistan, as a
private contractor) living in Europe – most of the time actually with a legal visa. He has worked in hotels and cafes in
Southern Germany and the Alps and owned a restaurant in Stuttgart for a number of years.

The menu was designed in order to be able to achieve maximum freshness– as all items are made from scratch daily.
